Retort processing is the procedure of sterilizing food products under high temperature and pressure to ensure prolonged durability and storability. This process is commonly employed using metal or plastic packaging, sealing the items tightly after they are placed inside.

The retort process is implemented to eliminate the effects of microorganisms and enzymes on food products. Various food items such as canned goods, ready meals, soups, fish, and meat products often undergo this procedure. Thanks to this method, food products can be stored at room temperature and have an extended shelf life.

After being placed inside the food items, the retort process involves heating them at high temperatures within a vacuum-sealed container. This procedure ensures the death of microorganisms and pathogens present in the foods. Subsequently, the foods are rapidly cooled and packaged in a sterile manner.
